We just tried to book a room in Amsterdam... put in all the payment info and received a message that the booking didn't go through, but were charged

You were scammed, they're not real. Hotel front desk clerk here, every time anyone uses this site, their reservations never show up. I would call your bank/card company and dispute it and get you a new card number
