You could do that. In fact before (circa 2016-2020) some employers are vehemently asking to set up a schedule with them through Skype and will just go through agreements there. If you do that you might earn more but you are not protected. I personally haven't seen an experience here that they are able to help in such scenarios even if they strengthen their ways over the years. I'd say go with your own terms do not let them decide for you.
